Zucchini Salad

2 lb zucchini, grated

1 tsp. salt

3 T. sour cream or yogurt

3 T. mayonnaise

1 ½ T. Dijon mustard

1 clove garlic, minced

Lettuce and tomato

 

Mix zucchini and salt for 1 hour. Squeeze out moisture. Mix together sour cream, mayo, mustard and garlic. Add zucchini to mixture. Serve on lettuce with tomato.
