Tomato and Onion Salad

3 lbs tomatoes

1 sweet onion

½ cup tightly packed basil, chopped

1/3 cup olive oil

6 T. red wine vinegar

2 cloves garlic, minced

½ tsp. Dijon mustard

Salt to taste

 

Slice tomatoes and onions. Place in serving bowl. Sprinkle with basil. Combine remaining ingredients and pour over tomatoes. Marinate at room temperature for 30 minutes.
