Mozzarella and Tomato Salad

2-3 lbs of tomatoes

½ lb mozzarella cheese,

sliced thin

¼ cup packed basil leaves, chopped

1 T wine vinegar

2 or more cloves garlic, minced

1/3 cup olive oil

salt and pepper to taste

 

Alternate tomato and mozzarella slices in spiral pattern around a plate. Mix together basil, vinegar, garlic and oil. Spoon over the tomatoes and cheese. Let stand at room temperature 30 minutes before serving.
